The name of this culinary gem is ‘Shuddh Chaat Bhandar,’ and the driving force behind it is Hema Halwai, the owner with a decade of dosa-making expertise under his belt.

Hema Halwai proudly disclosed that the primary dosa artisans at Shuddh Chaat Bhandar are mostly natives of Saharanpur, deeply connected to their culinary roots. They whip up a diverse range of dosas using various recipes, drawing customers from cities and villages alike who come in search of a unique gastronomic experience.

Shuddh Chaat Bhandar boasts an extensive repertoire of 70 dosa recipes. For regular patrons, the focus is on four distinct varieties: paneer, masala, onion, and Uttam dosas, lovingly crafted by the skilled hands at the eatery.

The secret to the dosa’s exceptional taste lies in the chutney served alongside it, prepared by frying a mix of onions, green chilli, coriander, ginger, and more in oil. Not stopping there, Hema mentioned that they create their dosa batter from scratch, with most of the spices ground at home. The sole exception is MDH masala, sourced from the market.
